Recipe: Oatmeal Coffee Cake

Oatmeal Coffee Cake Recipe

Oatmeal Coffee Cake from the Washington House Inn
Ingredients:
1 ½ cups boiling water
½ cup butter
1 cup oatmeal
2 eggs
1 cup sugar
1 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon salt
1 ½ cups flour

Topping:
1 Tablespoon butter, melted
1 Tablespoon flour
1 teaspoon cinnamon
½ cup brown sugar

Directions:
Preheat oven to 350 degrees F. Grease and flour a 9 inch by 9 inch pan. In large bowl, combine boiling water, butter and oatmeal. Let sit for 20 minutes. Add remaining cake ingredients and stir until mixed. Bake 40 minutes or until done. Combine topping ingredients and mix until crumbly. Sprinkle over top of cake and return to oven 5 minutes.  Serves 9.
