Recipe: Overnight Egg Strata
This crowd-pleasing recipe, like many we make here at our boutique Cedarburg hotel, is extremely versatile and easy to personalize. Changing the variety of cheese, meat and seasonings gives you nearly endless variations. For the bread portion, we have used croissants, almost any kind of yeast bread, biscuits, even bagels. Add herbs or veggies such as raw or cooked peppers, green onions, sauteed zucchini or mushrooms, diced tomatoes or fresh spinach for even more variety. We haven’t found a bad way to make it yet!
Overnight Egg Strata
2 cups milk
1 cup shredded cheese such as cheddar or swiss
1 lb cooked bacon, sausage or ham, diced
1 teaspoon salt
1/2 teaspoon pepper
1 Tablespoon seasoning mix (we like Penzey’s Sunny Paris)
8 small croissants or bread slices, cubed
In large bowl, whisk eggs and milk until completely mixed, add
remaining ingredients and combine. Pour into a greased 9 by 13 inch
pan, cover and refrigerate overnight. In the morning, bake at 350
degrees F for 50 to 60 minutes, or until set. Serve with salsa or hot sauce if desired.
